Sous Chef Mediterranean Cuisine Jumeirah Marsa Al Arab Dubai

An opportunity has arisen for a Sous Chef to join our team in our upcoming Mediterranean Restaurant at Jumeirah Marsa Al Arab at Jumeirah 3 Umm Suqeim, Umm Suqeim, Dubai, United Arab Emirates. This is an Entry level full time job. For this job the salary ranges from 3000-6000 AED/month which may be slightly negotiable during interview process.

Responsibilities of Sous Chef

  • Prepare and cook high quality food according to menu guidelines and recipes and as per instructions received from Sous Chef or Chef De Cuisine.
  • Assist Executive Chef / Chef de Cuisine to set service and food standards in compliance with the group’s policies, procedures, and quality standards.
  • Motivate subordinates and contribute to the identification of opportunities for participating in change Initiatives. Programmes and Projects considering best practices, improvement of processes and productivity improvement.
  • Implement approved departmental policies, processes, and procedures, and provide instructions to subordinates and monitor their adherence so that work is carried out in a controlled. Consistent manner while delivering a quality service to guests and maintaining standards of excellence.
  •  Keeping up to date with industry trends, new techniques, and culinary innovations.
  • Optimize the use of restaurant resources: food, energy, labour, water. Supervise and check every dish sent from the section to ensure adherence to the kitchen quality standards.
  • Adhere to all relevant Health, Safety and Environment procedures, Fire and Safety
    instructions, controls, and audit requirements in compliance with HACAP and Jumeirah.

  • In the absence of senior chefs and ensure daily kitchen records and labelling standards are.
    being always maintained and all set standards and quality procedures are adhered to.
  • Communicate any issues arising within the section to the Executive Sous Chef and act any further directions given. Ensure prompt solution to problems for the smoother operations of the kitchen.

Requirements of Sous Chef

  • Technical Degree in Food and Beverage or Hospitality Management.
  • 1-2 years Progressive experience in a la carte restaurant, preferably in the same role, with a focus in high-end restaurants or luxury hospitality brands.

Skills and Knowledge Desired

  • Skilled in a diverse array of culinary techniques and cooking methods, with a preferred international experience in in a Mediterranean or Italian Cuisine.
  • Formal culinary training or relevant education from a recognized culinary institute.
