The Pastry Junior Sous Chef is responsible for the production and presentation of pastries and other baked goods. Assists the Senior Executive Pastry Chef in the daily activities of the kitchen, including menu development, inventory and purchasing of supplies and cost control.

Responsibilities of Junior Sous Chef

  • Prepares/produces/bakes breads, rolls, breakfast pastries and desserts according to standard recipes, in order to contribute the overall guest satisfaction.
  • Creates and recommends menu changes to the Senior Executive Pastry Chef.
  • Decorates pastries/cakes with creativity and skill.
  • Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration of same.
  • Monitor and control the maintenance/sanitation of the pastry shop and equipment.
  • To ensure a healthy, safe work environment which meets/exceeds standards and regulations.
  • Ensures spoilage/waste are kept to a minimum by ordering and utilizing proper quantities and rotating products.
  • Set daily pars on all products to ensure freshness.
  • Supervise pastry section Team Members, train, empower, coach and counsel, resolve problems, provide open communication.
  • Providing a safe and secure environment by adhering to the company Health & Safety and Food Safety policies ensuring all areas are compliant with audit requirement.

Requirements of Junior Sous Chef

  • High School graduate or equivalent preferred.
  • Advance degree or specialized training in Pastry is highly desirable.
  • Pastry/Bakery certificate or apprenticeship helpful.
  • Food hygiene and HACCP certificate.
  • 5+ years pastry cooking/baking experience.

Skills and Knowledge Desired

  • All selected candidates are required to undergo a food trial in kitchen.
  • Skilled in creating, preparing/producing and decorating pastries and cakes.
  • Knife handling, pastry & baked goods knowledge.
  • Strong Supervisory/Management skills required.
  • Excellent oral and written communication skills required.
