Junior Sous Chef Mövenpick Hotel Jumeirah Lakes Towers is responsible to assist the Sous Chef and Executive Chef in preparing and cooking high quality dishes, ensuring adherence to recipes and food safety standards, and supervising kitchen staff to maintain a smooth culinary operation.

Responsibilities of Junior Sous Chef

  • Assists Chef de Cuisine/Executive Chef in the supervision of all colleagues engaged in the kitchen.
  • Attends daily meetings with Executive Chef regarding menus.</li> <li>Assists Chef de Cuisine/Sous Chef in planning menus and recipes and test samples in conjunction with the Executive Chef.</li> <li>Writes specific and accurate product specifications and standard recipes for use in the computer and by the material manager.</li> <li>In conjunction with the chef de cuisine/Sous Chefs, establishes job methods and supervise on a regular basis and correct if necessary, cooking standards to maintain a high quality of food and service on quality basis.
  • Plans rosters on a 1 weekly basis and to review on a daily basis with the Chef de cuisine/Sous chefs overtime, rosters and holiday requirements and absenteeism.
  • Liaises with the Steward in charge in order to ensure high standards of cleanliness are maintain.
  • Maintains record and follow up documentation, checklists for control purposes.
  • You will adhere to Hotel’s Hygiene and HACCP standards and ensure it’s Standard Operating Procedures and Requirements are fully met.
  • Ensures all the Dubai municipality and HACCP regulations are followed and documentation is up to date as per requirement, readiness for all hygiene audits at any given point of time.

Role Requirements

The requirements for the job role of Junior Sous Chef are as under:

  • Completed kitchen apprentice or chefs professional course.
  • At least 5 years in a five star international hotel or restaurant.
  • At least five years as a Chef de Partie.
  • At least one year in an international five-star hotel in similar position or above.
