Director Beverage Atlantis Dubai 

Atlantis Dubai is presently accepting applications from suitable candidate for the job role of Director Beverage. The selected candidate will be responsible for the smooth operation of all bars of the resort and to are to ensure  guests receive the highest level of beverage quality and service, manage and develop a team, monitor and strive for the annual budget, manage labor cost and operating expenses for all the bars and develop relationships with guests, key suppliers and industry associates.

Responsibilities Of  Director Beverage

• Oversee leadership in the development and monitoring of beverage operations, fiscal budgets, guest service standards, and marketing strategies to produce both short‐term and long‐term profitability.
• Establish par levels for supplies, liquor, beer, wine and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
• Oversee implementation of policies, operating procedures, training programs, directives, menus, work schedules, rules and regulations for the beverage staff and personnel.
• Maintain complete knowledge of all liquor brands, beers and non‐alcoholic selections available in outlets, the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
• Create, develop and implement beverage concepts for new outlets during the pre-opening
• Work with Brand Partners to review and establish standards, staffing levels, recruitment strategy, alignment with hotel policies and SOPs, etc.
• Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage. Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
• Manage beverage inventory and cost control.
• Design and direct special event beverage service set-up.
• Scout for trends to enhance beverage offer and leads the implementation on the fleet to generate additional revenue opportunities.

• Remains aware of internal and external conditions and industry innovations and best practices and applies this knowledge as appropriate in managing and leading company’s beverage operations.
• Strategize and formulate initiatives for Atlantis Dubai beverage programs, so as to be reognized as an industry leader with recognition through internationally recognized bodies.
• Responsible for the financial performance of the Beverage department.
• Manage annual budget for the beverage operation, including all beverage related revenue and cost accounts.
• Monitor the execution of key operational processes, such as training, quality/recipe control, steps of service, inventory and ordering processes.
• Provide beverage leadership and expertise to various company projects and business initiatives.
• Any other tasks / duties as assigned.

Requirements Of Director Beverage

• Bachelor’s degree in Hospitality Management
• Minimum 5 experience in managing Bars and volume operations

• Ability to create innovative cocktail programs based on outlet concept and seasonality.
• Ability to creatively challenge himself and others in order to exceed guests’ expectations.
• Proven record of building strong relationships with team members, patrons and managers.
• Outstanding communication and presentation skills.
• Result driven with strong attention to detail and organizational skills.
• Passionate Food & Beverage operator following the current trends.
• Leading role in one of the Top50 bars in the world will be an advantage.
