Job Description

This full-time Demi Chef de Partie role at the brand-new Claw BBQ (American smokehouse & crab shack) inside Hampton by Hilton Marjan Island is a dream gig for a strong, passionate cook who lives for low-and-slow brisket, ribs, lobster rolls and big bold flavours. You’ll run your own section, smoke meats, prep sauces, plate Insta-worthy dishes and keep the kitchen spotless in one of the UAE’s hottest beach resorts. Pay is AED 3,800–4,800/month all-in + high service charge (real take-home AED 6,000–9,000/month), single accommodation, annual flight, medical, 30–45 days leave, duty meals, Hilton worldwide staff rates. 6-day week, straight or split shifts. Perfect for NVQ Level 2/3 cooks who want to join an opening team and fast-track to CDP or Sous in a 300+ room island resort.

Job Title

Demi Chef de Partie – Claw BBQ (American Smokehouse)

Responsibilities

  • Smoke brisket, ribs, pull pork to perfection.
  • Run hot line or cold prep section.
  • Plate big, bold American seafood & BBQ dishes.
  • Prep sauces, rubs, slaws from scratch.
  • Keep fridges organised and rotated.
  • Control portion and minimise waste.
  • Maintain spotless station and deep cleans.

Requirements

Education

NVQ Level 2 or 3 in Culinary Arts (or equivalent).

Experience

2+ years in busy smokehouse, American, or high-volume kitchen.

Must Have

  • Strong knife skills and grilling experience.
  • Fluent English.
  • Able to handle high-volume service.
  • Eligible to work in UAE.

Nice to Have

  • Previous Hilton or island resort experience.
  • Smoking/BBQ knowledge is gold.
