Job Description

Isola Ristorante Italiano by senset is looking for Commis 1 who knows their way around a bakery station. This is a full-time role based in Dubai, inside a high-end Italian restaurant. As a Commis 1 you’ll be part of the kitchen team, working mainly on baked items like bread, rolls, and small desserts. The role needs someone with real hands-on experience – at least a year or two in a bakery or pastry kitchen, not just theory. You’ll need to know how to keep your section clean, your dough proofed right, and your timing sharp. The team works fast, and during busy nights or weekends, things move quickly. It’s ideal if you’ve worked in a fine-dining setup before, or even a hotel kitchen. Pay is competitive, and there are extra perks too.

Job Title

Commis 1 – Bakery.

Responsibilities

  • Help prep dough, shape loaves, roll out pastries, and portion things properly.
  • Set up the bakery station before service starts that means tools, trays, ingredients.
  • Follow recipes that come from the pastry chef. Stick to them. Don’t guess.
  • Watch your bake times bread overdone is a no-go. Same with underbaking.
  • Label ingredients properly. Date them. Store cold stuff where it belongs.
  • Clean your area when you’re done no loose flour or dough bits left behind.
  • If you see we’re low on ingredients, say something.
  • Assist with new menu items or testing if asked.
  • Support with other kitchen duties during slower hours if needed.
  • Respect hygiene protocols gloves, hairnets, and constant handwashing.
  • Operate ovens, mixers, and tools safely.
  • Double-check what goes out no cracked crusts or raw dough.
  • Work under pressure and handle time crunch during peak service.
  • Be on your feet a lot. It’s not a sit-down job.
  • Shifts might change. Be okay with weekends or holidays.

Requirements and Qualifications

Education

No diploma required. Pastry or bakery course is a bonus, but experience matters more here.

Experience

  • 1 to 2 years minimum in a professional bakery, pastry kitchen, or hotel back-of-house.
  • Previous experience in a fine-dining or premium brand environment is preferred.

Skills

  • Comfortable working around ovens, mixers, and bakery tools.
  • Able to follow recipes without changing the method.
  • Can manage time well you’ll be working on multiple things at once.
  • Good hand-eye coordination for shaping dough and plating.
  • Fast learner and responds well to instructions.
  • Positive attitude in a team kitchen setup.

Knowledge

  • Understands basic dough-making steps — proofing, resting, baking.
  • Knows how to store and rotate ingredients.
  • Familiar with Italian or European pastry items.
  • Basic food safety and HACCP awareness.
  • Can recognize problems in dough texture, bake color, or oven timing.
